			<content:encoded><![CDATA[<p>Dear Fellow Culinary Members,</p>
<p>We should be back up with our web-site. A special thanks to Jim Morrison who will be taking care of it now. Sorry about all the delays and issues with the web-site. Hopefully we won’t have any more major issues.</p>
<p>We as a board would like to encourage our members to acquire there local vendors to support and join our organization. Together this can strength our association. Our chapter is working to get a few yearly sponsors to assist us with upgrading our educational sessions.</p>
<p>We had our practical exam on March 19th, at the University of Akron and three people participated and we have 1 person passed.</p>
<p>May 9th we where schedule to have Master Chef Steve Jilleba present a demonstration for are chapter he has a schedule conflict and we rebooked him for the fall. We have Dr. Kuber for the Ohio State University coming and presenting the educational segment for us.</p>
<p>I would like to thank McCormick Spice Company for the great educational component for Aprils meeting. For those who where unable to attend you missed a very informative session on the process of spices.</p>
<p>Please try to attend the Mays general meeting; it will be the last one until September.</p>
<p>If any members need a new member packet please contact Jim Martin for that information as membership chair, once you give the package to a new member Jim will then do a follow-up call and will invite the prospective member to one of our meetings.</p>

Not only does it have a sweet potato, in addition to a Russet potato, but it also contains corn, cucumber, and peanuts!</p>

<ul class="ingredients">
<li class="ingredient">1 large russet potato, peeled and quartered</li>
<li class="ingredient">1 large sweet potato, peeled and quartered</li>
<li class="ingredient">1 cup corn</li>
<li class="ingredient">1 teaspoon prepared Dijon-style mustard</li>
<li class="ingredient">2 tablespoons fresh lime juice</li>
<li class="ingredient">3 tablespoons chopped fresh cilantro</li>
<li class="ingredient">1 clove garlic, minced</li>
<li class="ingredient">3 tablespoons canola oil</li>
<li class="ingredient">1/2 teaspoon salt</li>
<li class="ingredient">1/4 teaspoon ground black pepper</li>
<li class="ingredient">1 cucumber, halved lengthwise and chopped</li>
<li class="ingredient">1/2 red onion, thinly sliced</li>
<li class="ingredient">1/4 cup finely chopped peanuts</li>
</ul>

<ol>
<li class="instruction">Place the Russet potato pieces into a large saucepan, and cover with salted water. Bring to a boil, turn the heat down, and simmer for 10 minutes. Add the sweet potato, and cook about 15 minutes more. Remove a piece of each potato, and cut it in half to see if it is cooked enough. Once the potatoes are tender, add corn kernels; cook another 30 seconds. Drain through a colander. Fill the saucepan with cold water, and drop vegetables into water. Cool for 5 minutes, and drain.</li>
<li class="instruction">In a large bowl, whisk together mustard, lime juice, cilantro, and garlic. Slowly whisk in oil. Mix in salt and black pepper.</li>
<li class="instruction">Cut cooled potatoes into 1 inch cubes, and add to dressing along with cucumber, and red onion. Toss well. Serve at room temperature or chilled. Toss the peanuts in just before serving.</li>
